Sin Jong-cheol appointed executive chef at JW Marriott Hotel Seoul

JW Marriott Hotel Seoul announced the appointment of new executive chef Sin Jong-cheol.

Sin is the first Korean to fill the hotel’s top culinary position.

A native of the southern island of Jejudo, Sin embarked on a career pin  hotels after being inspired by his elder sister, who also worked at a hotel.

From 1992 onward, he worked at Hotel Shilla Jeju before moving to the Korean capital and joining Hotel Shilla Seoul, where he was placed in charge of cuisine and quality control at all-day dining restaurant The Park View.

Sin’s first action upon his appointment was to create an R&D team that includes leading chefs from the kitchens of each of JW Marriott Seoul’s restaurants.

The team began by comprehensively redesigning the menu at buffet restaurant The Cafe @ JW, and is currently working on creating yet more distinctive menus for the hotel’s Japanese and Chinese restaurants.

Lamb and alchemy at Il Ponte

Il Ponte, Millennium Seoul Hilton’s popular Italian trattoria, will host a monthlong promotion showcasing lamb dishes and the culinary alchemy that occurs when combined with certain flavor profiles.

Throughout October, diners will be able to enjoy a special set menu featuring flavorful and aromatic Italian lamb dishes.

The five-course menu entitled “Science of Lamb” will feature delectable dishes such as: grilled lamb skewer on arugula, cucumber goats cheese salad with lime dressing and foccacia bread; penne pasta with spiced lamb meatballs in a chunky tomato sauce; grilled rack of lamb with an olive-pistachio crust, mushroom risotto, vegetable ratatouille and marsala sauce; and more.

Also at Il Ponte, every Saturday and Sunday at lunchtime (11:30 a.m. -- 2:30 p.m.), your children, the chefs of the future, are invited to explore their culinary and creative talents by making their own pizza. The chef will then bake your child’s masterpiece to simmering perfection.
